Taco Tuesday: A Healthier Alternative to Your Fav Mexican Fare
What’s a Tuesday without a taco? We’ve been using Taco Tuesday as the perfect excuse at adding a little fiesta into our work week siesta for years. It’s a cheap, easy and fun way to have everyone looking forward to dinner.
Here at RejuvaHealth, we’ve searched the recipe books to provide you with a simplistically delicious Mexican dish without the added calories that the entire guest list will enjoy.
Our secret? Substitute ground beef for ground turkey and taco shells for low carb tortillas. This will greatly reduce the fat intake and still provide the essential protein. Did we mention that each serving size is only 170 calories? Seconds, please!
Makes 6 servings
- 1.5 lbs extra lean ground turkey
- 6 low carb tortillas* (approximately 50 calories each, we used La Tortilla)
- 1 1/2 tbs chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp oregano
- 1/2 tsp paprika
- 1 tsp cumin
- salt and pepper to taste

If you’d like your tacos to have a hard shell, place the tortillas in the oven so they drape from two bars of your oven rack. Broil for 3-5 minutes or until crispy and golden brown! In a large nonstick pan, cook turkey meat on medium heat until brown. In a small bowl, mix together all the spices for the taco seasoning and add to turkey in the pan. Spoon turkey into your tortillas and top with lettuce, tomatoes, and cheese!
